Nació en Roma el 5 de noviembre de 1968,[1] de padre español Ángel Sánchez-Gijón Martínez [es], profesor de historia exiliado del franquismo, y de madre italiana, Fiorella de Angelis, conferenciante. [Fue bautizada con el nombre de Aitana Alberti,[n. 1] hija de Rafael Alberti.[2][3] Este último le dedicó a Aitana Sánchez-Gijón unos versos al nacer.[2] Ella y sus padres se trasladaron a Madrid cuando tenía un año de edad.[3]
Más conocida por su carrera en el cine español, Sánchez-Gijón se dio a conocer internacionalmente por su interpretación de Victoria Aragón, una hija de viticultor mexicano-estadounidense embarazada y abandonada que recibe la ayuda del viajante de comercio Paul Sutton (Keanu Reeves) en Un paseo por las nubes (1995)
